JAI'S CREAMED COD SOUP

Here is a delightful way to serve cod:

2T olive oil
1T butter
1 clove garlic (minced)
1/2 tsp minced fresh ginger
2 T finely chopped onion
3 finely chopped mushrooms

Heat olive oil and butter in a pan. Add rest of the above ingredients and saute until tender.
Add 1 8-oz cod filet and cook until done. Break cod into small pieces.
Then add:
1/4 cup coconut cream
1/4 cup liquid from yogurt or 1/2 cup cream
2 T chopped, fresh chives

Heat until warmed, salt to taste and enjoy.

One thing to remember about Chaya is that it needs to be cooked for it to be edible. So here is a great way to prepare it. Steam the leaves for 15 to 20 minutes. Add lemon and butter . Enjoy in the place of regular spinach. This plant is rich in vitamins.
